easier first piece of pie removal
getting the first piece of a pie out intact is a challenge. rather than just cutting the first piece, cut the second as well. then remove. for some reason it comes out a lot easier.
cleaning mushroomsalthough alton brown swears you can wash mushrooms with water - i am fearful. i use a toothbrush to clean the dirt off mushrooms. after every use i clean the toothbrush (it can go thro the dishwasher) and keep it in my equipment drawer.
garlicwhen mincing garlic if you add a couple drops of oil (whatever oil you are going to cook with) to the garlic - it is a whole lot less sticky.
after mincing garlic - let it stand at room temp for at least 10 minutes. it supposedly activates garlic's anti-cancer properties.
