we wanted a light dinner...this fits the bill. i am not a fan of anchovy and raw egg scares me - so this recipe for caesar dressing is perfect.
caesar salad with hard-boiled eggs
dressing adapted from smittenkitchen.com
2 tbs. mayo
2 tbs. lemon juice
zest of lemon
1 1/2 tsp. white wine vinegar
2 tsp dijon mustard
2 garlic cloves (made into paste on microplane)
1/2 tsp. worcestershire sauce
1/4 c. extra virgin olive oil

6 hard boiled eggs
parmesan cheese (shaved with veggie peeler and grated for dressing)
combine mayo, lemon juice, zest, vinegar, mustard, garlic and worcestershire with a whisk. drizzle in oil. stir in a small handful of grated parmesan .
Cut 1/2 baguette into 1 inch chucks. Toss with olive oil and salt in a skillet. Once brown and crispy (4 minutes) take off heat and sprinkle with pepper.
