this is the best vanilla pudding i have ever eaten - i am not kidding! i serve it with shaved chocolate on the top. espresso flavored chocolate is killer on top.
2/3 c sugar
1/4 c cornstarch
1/4 tsp salt
2 1/2 c whole milk
4 lg egg yolks
3 tbs unsalted butter
1 1/2 tsp vanilla extract
1 vanilla bean (seeds scraped out)
put a sieve in a bowl
in sauce pan off hear, whisk sugar, corn starch and salt. gradually whisk in milk, eggs and vanilla seeds.
turn burner to med. whisk constantly until it starts to thicken and you see bubbles. reduce heat to low and cook another minute.
pour through sieve, stir in butter and vanilla extract.
place plastic wrap right over the surface and chill.
before serving whisk until smooth.
