
this is my staple cookie recipe. whenever cookies are needed - this is the go to recipe. these oatmeal chocolate chip cookies are perfectly chewy and flavorful. the best part is how versitile they are - you can change-up the ingredients on a whim.
versions i have made....
- added toasted walnuts
- almond and dried blueberry
- walnut and dried cranberry
- white and dark chocolate
- white chocolate with dried raspberries
the possibilities are endless!
oatmeal chocolate chip cookies

3/4 c. unsalted butter (room temp)
1 c. light brown sugar (packed)
1 lg egg
1 1/2 tsp vanilla extract
3/4 c. all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
3 c old fashioned rolled oats
1 c chocolate chips (i mixed white and semi sweet)
preheat oven to 350
line baking sheet with silpat or parchment

in mixer, cream butter and sugar. add egg and vanilla. mix to combine.
in separate bowl, whisk flour, baking soda, salt and cinnamon.
slowly add dry to wet. mix to combine.
stir in oats and chocolate chips.
use ice cream scoop to portion cookies.
bake 12 minutes.
